Have a Halva

Halva is a nutty Greek sweet made with sesame seeds or nuts and semolina. Definitely NOT for people with allergies!

You will need:

125g butter

1 cup (160g) semolina

2 tablespoons silvered almonds / sesame seeds / other nuts

2 1/2 cups (625ml) water

1 cup (220g) castor sugar

1 teaspoon ground cinnamon

What to do:

  1. Heat butter in a pan, add semolina and nuts, cook, stirring constantly, for about 5 minutes or until semolina is lightly browned. Remove pan from heat.
  2. Combine water and sugar in pan, stir over heat without boiling, until sugar is dissolved. Bring to boil, simmer, uncovered, without stirring for 5 minutes. Gradually stir hot syrup into semlina mixture, add cinnamon, stir over low heat until smooth and bubbling; cook while stirring for further 2 minutes.
  3. Remove from heat, cover pan with folded tea-towel, then lid; stand for 15 minutes.
  4. Grease base of 20cm round cake pan, cover base with baking paper, grease paper. Spread mixture evenly into pan. Place pan on wire rack, stand for 5 minutes, turn halva onto serving plate. Cut into wedges to serve.
