Halva is a nutty Greek sweet made with sesame seeds or nuts and semolina. Definitely NOT for people with allergies!
You will need:
1 cup (160g) semolina
2 tablespoons silvered almonds / sesame seeds / other nuts
2 1/2 cups (625ml) water
1 cup (220g) castor sugar
1 teaspoon ground cinnamon
What to do:
- Heat butter in a pan, add semolina and nuts, cook, stirring constantly, for about 5 minutes or until semolina is lightly browned. Remove pan from heat.
- Combine water and sugar in pan, stir over heat without boiling, until sugar is dissolved. Bring to boil, simmer, uncovered, without stirring for 5 minutes. Gradually stir hot syrup into semlina mixture, add cinnamon, stir over low heat until smooth and bubbling; cook while stirring for further 2 minutes.
- Remove from heat, cover pan with folded tea-towel, then lid; stand for 15 minutes.
- Grease base of 20cm round cake pan, cover base with baking paper, grease paper. Spread mixture evenly into pan. Place pan on wire rack, stand for 5 minutes, turn halva onto serving plate. Cut into wedges to serve.
